- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup brown sugar
- 1 cup all-purpose flour
- 1/2 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, sugar, and brown sugar.
- Add flour, milk, oil, eggs, and vanilla extract. Mix well.
- In another bowl, combine baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- Combine dry ingredients with wet ingredients. Stir until smooth.
- Fill cupcake liners 2/3 full with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cupcakes cool before serving.
Notes
- Store cupcakes in an airtight container.
- They can be frozen for later use.
- Top with whipped cream if desired.
