Instructions
- Heat olive oil in a skillet over medium heat.
- Fry the tortillas until crispy, about 1 minute per side. Remove and drain on paper towels.
- In the same skillet, crack the eggs and fry to your desired doneness.
- Warm the black beans in a separate pot.
- Assemble the dish by placing a tortilla on a plate, topping it with black beans, a fried egg, salsa, queso fresco, and cilantro.
- Serve immediately.
