Instructions

  2. In a large bowl, cream together butter, brown sugar, and granulated sugar.
  3. Add eggs and vanilla extract, mixing well.
  4. In another bowl, combine flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Stir in oats until well combined.
  7. Drop rounded tablespoons of dough onto baking sheets.
  8. Bake for 10-12 minutes until edges are golden.
  9. Let cookies cool completely.
  10. For the filling, beat together powdered sugar, shortening, and vanilla until smooth.
  11. Spread filling on the flat side of one cookie and top with another.
