- 1 cup brown sugar

- 3 cups old-fashioned oats
- 1 cup powdered sugar
- 1/2 cup vegetable shortening
- 1 teaspoon vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together butter, brown sugar, and granulated sugar.
- Add eggs and vanilla extract, mixing well.
- In another bowl, combine flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Stir in oats until well combined.
- Drop rounded tablespoons of dough onto baking sheets.
- Bake for 10-12 minutes until edges are golden.
- Let cookies cool completely.
- For the filling, beat together powdered sugar, shortening, and vanilla until smooth.
- Spread filling on the flat side of one cookie and top with another.
