  • 2 large eggs

  • 1 cup boiling water
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1/2 cup evaporated milk
  • 1/2 cup butter
  • 1 cup brown sugar
  • 3 large egg yolks
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a bowl, mix flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  4. Add buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients. Beat on medium speed for 2 minutes.
  5. Stir in boiling water until well combined.
  6. Pour batter evenly into prepared pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let the cakes cool in pans for 10 minutes, then remove from pans to cool completely.
  9. In a saucepan, combine evaporated milk, butter, brown sugar, and egg yolks. Cook over medium heat, stirring constantly, until thickened.
  10. Remove from heat, and stir in coconut and pecans. Let cool.
  11. Frost the cooled cakes with the coconut pecan frosting.
