A creamy and delicious chicken enchilada casserole that is easy to prepare and perfect for any occasion.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 can (10 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 8 small tortillas
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the shredded chicken, black beans, corn, enchilada sauce, sour cream, cumin, garlic powder, salt, and pepper.
  3. Layer half of the tortillas in a greased baking dish.
  4. Spread half of the chicken mixture over the tortillas.
  5. Sprinkle half of the cheese on top.
  6. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
  7. Bake for 25-30 minutes until bubbly and golden.
  8. Let it cool for a few minutes before serving.

Notes

  • You can use rotisserie chicken for convenience.
  • Feel free to add vegetables like bell peppers or onions.
