- 2 cups cooked shredded chicken
- 1 can (10 oz) enchilada sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 8 small tortillas
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the shredded chicken, black beans, corn, enchilada sauce, sour cream, cumin, garlic powder, salt, and pepper.
- Layer half of the tortillas in a greased baking dish.
- Spread half of the chicken mixture over the tortillas.
- Sprinkle half of the cheese on top.
- Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
- Bake for 25-30 minutes until bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- You can use rotisserie chicken for convenience.
- Feel free to add vegetables like bell peppers or onions.
- Top with fresh cilantro or avocado if desired.
