Ingredients

- 2 cups of Brussels sprouts, halved
- 1 cup of sweet potatoes, cubed
- 1 cup of green beans, trimmed
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss Brussels sprouts, sweet potatoes, and green beans with olive oil, garlic powder, salt, and pepper.
- Spread the vegetables on a baking sheet in a single layer.
- Roast for 25-30 minutes, stirring halfway through.
- Remove from oven and sprinkle with fresh parsley before serving.
Notes
- Feel free to add other vegetables like carrots or cauliflower.
- This dish can be made ahead and reheated.
