- 4 medium potatoes
- 4 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dry the potatoes.
- Slice the potatoes thinly without cutting all the way through.
- Brush the potatoes with olive oil, ensuring oil seeps into the cuts.
- Sprinkle salt, pepper, garlic, and rosemary over the potatoes.
- Bake for 40-45 minutes until crispy.
- In the last 10 minutes of baking, sprinkle Parmesan cheese on top.
Notes
- Adjust seasoning to taste.
- Use other herbs if desired.
- Serve with sour cream or chives.
