Ingredients

  • 2 tablespoons olive oil

  • 1 teaspoon pepper
  • 1 tablespoon fresh thyme

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa, reduce heat, and cover for 15 minutes.
  4. In a skillet, heat olive oil and sauté onions, carrots, and celery until tender.
  5. Add cranberries, pecans, salt, pepper, and thyme to the skillet.
  6. Combine quinoa with the vegetable mixture.
  7. Serve warm.
