A collection of gluten free side dishes perfect for Thanksgiving.
Ingredients

- 2 cups quinoa
- 4 cups vegetable broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onions
- 1 cup cranberries
- 1/2 cup chopped pecans
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon fresh thyme
Instructions
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa, reduce heat, and cover for 15 minutes.
- In a skillet, heat olive oil and sauté onions, carrots, and celery until tender.
- Add cranberries, pecans, salt, pepper, and thyme to the skillet.
- Combine quinoa with the vegetable mixture.
- Serve warm.
Notes
- Make sure all ingredients are certified gluten free.
- You can substitute nuts with seeds for a nut-free option.
