Ingredients

- 2 cups almond flour
- 1 cup coconut flour
- 1 cup maple syrup
- 1 cup pumpkin puree
- 1/2 cup coconut oil
- 4 large eggs
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond flour, coconut flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together eggs, maple syrup, pumpkin puree, and melted coconut oil.
- Combine the wet and dry ingredients until well mixed.
- Pour the batter into a greased baking dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Store leftovers in the refrigerator.
- Serve with whipped coconut cream.
