Ingredients

  • 2 cups almond flour
  • 1 cup coconut flour
  • 1 cup maple syrup
  • 1 cup pumpkin puree
  • 1/2 cup coconut oil
  • 4 large eggs
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, coconut flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together eggs, maple syrup, pumpkin puree, and melted coconut oil.
  4. Combine the wet and dry ingredients until well mixed.
  5. Pour the batter into a greased baking dish.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let it cool before serving.
