Ingredients

- 1 gluten free pie crust
- 2 cups mixed vegetables (carrots, peas, bell peppers)
- 1 cup cheese, shredded
- 3 eggs
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried herbs (thyme or oregano)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, beat the eggs and mix in the milk, salt, and pepper.
- Add the mixed vegetables and cheese to the egg mixture.
- Pour the filling into the gluten free pie crust.
- Bake for 30-35 minutes until the filling is set and the crust is golden brown.
- Let it cool for a few minutes before slicing.
Notes
- Store leftovers in the fridge for up to 3 days.
- You can use any vegetables you like.
