Delicious gluten free lemon curd cookies that are zesty and sweet.
Ingredients

- 1 cup gluten free all-purpose flour
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/4 cup lemon curd
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter and sugar.
- Add the lemon curd, egg, and vanilla extract. Mix well.
- In another bowl, combine the gluten free flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture. Stir until combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool before serving.
Notes
- Store cookies in an airtight container.
- Use homemade or store-bought lemon curd.
- Adjust the sweetness by adding more or less sugar.
