Ingredients

  • 1/2 cup coconut oil
  • 1/4 cup maple syrup
  • 2 cups pumpkin puree
  • 1 cup coconut milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 2 cups green beans
  • 1 cup vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 350°F.
  2. Mix gluten-free flour, coconut oil, and maple syrup in a bowl.
  3. Press the mixture into a pie dish to form the crust.
  4. In another bowl, combine pumpkin puree, coconut milk, vanilla, cinnamon, nutmeg, and salt.
  5. Pour the filling into the crust.
  6. Bake for 45 minutes or until set.
  7. For the green beans, sauté onion and garlic in a pan.
  8. Add green beans and vegetable broth.
  9. Cook until beans are tender.

Notes

  • You can substitute other sweeteners for maple syrup.
