Delicious pumpkin pancakes inspired by Gilmore Girls.
Ingredients

- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup pumpkin puree
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
Instructions
- In a bowl, mix flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, combine pumpkin puree, milk, egg, and melted butter.
- Pour wet ingredients into dry ingredients. Stir until just combined.
- Heat a griddle or non-stick pan over medium heat.
- Pour batter in desired pancake size onto the griddle.
- Cook until bubbles form, then flip and cook until golden brown.
- Serve warm with maple syrup.

- Use whole wheat flour for a healthier option.
- Add chocolate chips for extra flavor.
