A simple and delicious dish made with chicken and rice, cooked in one pot.
Ingredients

- 4 chicken thighs
- 1 cup rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup frozen peas
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe pot, heat some oil over medium heat.
- Add onions and garlic, sauté until soft.
- Season chicken thighs with paprika, salt, and pepper.
- Brown the chicken in the pot for about 5 minutes on each side.
- Add rice and chicken broth to the pot, stir to combine.
- Bring to a boil, then reduce heat, cover, and transfer to the oven.
- Bake for 30 minutes.
- Stir in frozen peas and bake for an additional 5 minutes.
Notes
- You can use chicken breasts instead of thighs.
- Add vegetables of your choice for extra flavor.
- This dish can be made ahead of time and reheated.
