Ingredients

- 2 cups elbow macaroni
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1 cup bell pepper, diced
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Cook elbow macaroni according to package instructions.
- Drain and rinse macaroni under cold water.
- In a large bowl, combine macaroni, cherry tomatoes, cucumber, red onion, and bell pepper.
- In a separate bowl, mix mayonnaise, Dijon mustard, salt, and pepper.
- Pour dressing over pasta and vegetables; mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
