Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup bell pepper, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook elbow macaroni according to package instructions.
  2. Drain and rinse macaroni under cold water.
  3. In a large bowl, combine macaroni, cherry tomatoes, cucumber, red onion, and bell pepper.
  4. In a separate bowl, mix mayonnaise, Dijon mustard, salt, and pepper.
  5. Pour dressing over pasta and vegetables; mix well.
