- 2 medium eggplants, sliced
- 3 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 2 cups breadcrumbs
- 1/4 cup olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried oregano
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the eggplants and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices.
- In a pan, heat olive oil and fry the eggplant slices until golden brown.
- In a baking dish, layer marinara sauce, eggplant, mozzarella, and parmesan.
- Repeat layers until ingredients are used, finishing with cheese on top.
- Sprinkle breadcrumbs on top for a crispy finish.
- Bake for 25-30 minutes until bubbly and golden.
- Let cool for 10 minutes before serving.
Notes
- Serve with a side salad for a complete meal.
- Can be made ahead and reheated.
