Description

Ingredients

  • 2 medium eggplants, sliced
  • 3 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cups breadcrumbs
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices.
  4. In a pan, heat olive oil and fry the eggplant slices until golden brown.
  5. In a baking dish, layer marinara sauce, eggplant, mozzarella, and parmesan.
  6. Repeat layers until ingredients are used, finishing with cheese on top.
  7. Sprinkle breadcrumbs on top for a crispy finish.
  8. Bake for 25-30 minutes until bubbly and golden.
  9. Let cool for 10 minutes before serving.
