Description
This eclair ice box cake is a no-bake dessert that combines layers of graham crackers, pudding, and whipped cream.

- 2 boxes of instant vanilla pudding mix
- 4 cups of milk
- 1 container of whipped topping (8 oz)
- 1 box of graham crackers
- 1 cup of chocolate frosting
Instructions
- In a bowl, mix the pudding mix with milk. Stir until it thickens.
- Fold in the whipped topping until well combined.
- In a 9×13 inch dish, layer graham crackers at the bottom.
- Spread half of the pudding mixture over the graham crackers.
- Add another layer of graham crackers.
- Spread the remaining pudding mixture over the second layer of graham crackers.
- Add a final layer of graham crackers on top.
- Spread the chocolate frosting over the top layer.
- Cover and refrigerate for at least 4 hours or overnight.
Notes
- For best results, let it chill overnight.
- You can substitute chocolate pudding for vanilla if desired.
- Sprinkle crushed nuts or chocolate shavings on top for added texture.
