Ingredients

  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork.
  3. Bake the potatoes for 1 hour until tender.
  4. Let the potatoes cool slightly, then cut them in half and scoop out the insides into a bowl.
  5. Add sour cream, cheese, milk, butter, garlic powder, salt, and pepper to the potato flesh. Mash until smooth.
  6. Stir in green onions.
  7. Stuff the mixture back into the potato skins.
  8. Place the stuffed potatoes in a baking dish and top with additional cheese if desired.
  9. Bake for an additional 20 minutes.
