A simple and delicious twice baked potato casserole that is easy to prepare.
Ingredients

- 4 large potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup butter
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup chopped green onions
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Bake the potatoes for 1 hour until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out the insides into a bowl.
- Add sour cream, cheese, milk, butter, garlic powder, salt, and pepper to the potato flesh. Mash until smooth.
- Stir in green onions.
- Stuff the mixture back into the potato skins.
- Place the stuffed potatoes in a baking dish and top with additional cheese if desired.
- Bake for an additional 20 minutes.
- Serve warm.
Notes
- You can add bacon bits for extra flavor.
- This dish can be made ahead and refrigerated before the final bake.
