Description

Easy taco lasagna is a simple and delicious dish that combines the flavors of tacos and lasagna in a layered format.


Ingredients

  • 12 lasagna noodles
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups salsa
  • 1 can black beans, drained and rinsed
  • 2 cups corn, frozen or canned
  • 3 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1/2 cup chopped green onions

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  3. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  4. Add taco seasoning and 1 cup of salsa to the beef. Stir to combine.
  5. In a baking dish, spread 1/4 of the beef mixture on the bottom.
  6. Layer 3 noodles over the beef mixture.
  7. Add 1/3 of the remaining salsa, black beans, corn, and cheese.
  8. Repeat the layers two more times, finishing with noodles and cheese on top.
  9. Cover with foil and bake for 30 minutes.
  10. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
  11. Let it cool for a few minutes. Top with sour cream and green onions before serving.

Notes

  • You can substitute ground turkey for a leaner option.
  • Add jalapenos for extra heat.
  • This dish can be assembled ahead of time and baked later.
