Easy taco lasagna is a simple and delicious dish that combines the flavors of tacos and lasagna in a layered format.

- 12 lasagna noodles
- 1 pound ground beef
- 1 packet taco seasoning
- 2 cups salsa
- 1 can black beans, drained and rinsed
- 2 cups corn, frozen or canned
- 3 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 1/2 cup chopped green onions
Instructions
- Preheat oven to 350°F (175°C).
- Cook the lasagna noodles according to package instructions. Drain and set aside.
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add taco seasoning and 1 cup of salsa to the beef. Stir to combine.
- In a baking dish, spread 1/4 of the beef mixture on the bottom.
- Layer 3 noodles over the beef mixture.
- Add 1/3 of the remaining salsa, black beans, corn, and cheese.
- Repeat the layers two more times, finishing with noodles and cheese on top.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 15 minutes until cheese is bubbly.
- Let it cool for a few minutes. Top with sour cream and green onions before serving.
Notes
- You can substitute ground turkey for a leaner option.
- Add jalapenos for extra heat.
- This dish can be assembled ahead of time and baked later.
