Ingredients

- 1 lb ground beef
- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 2 cups shredded cheese
- 1 cup tortilla chips
- 1/2 cup chopped onions
- 1/2 cup chopped bell peppers
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef with onions and bell peppers.
- Add black beans, corn, diced tomatoes, and taco seasoning. Stir well.
- In a baking dish, layer half of the beef mixture.
- Add a layer of tortilla chips and sprinkle with cheese.
- Repeat the layers with the remaining beef mixture, chips, and cheese.
- Bake for 25-30 minutes until cheese is melted and bubbly.
Notes
- Serve with sour cream and guacamole.
- Can be made ahead and refrigerated before baking.
- Use ground turkey for a lighter version.
