Ingredients

- 2 pounds of chicken thighs
- 1 cup of diced onions
- 2 cups of chopped carrots
- 3 cups of potatoes, diced
- 1 can of diced tomatoes

- 1 tablespoon of dried thyme
- Salt and pepper to taste
Instructions
- Place chicken thighs at the bottom of the crockpot.
- Add onions, carrots, and potatoes on top of the chicken.
- Pour in the can of diced tomatoes and chicken broth.
- Sprinkle garlic powder, thyme, salt, and pepper over the mixture.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Shred the chicken before serving.
