- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup shredded coconut
- 1/2 cup crushed pineapple, drained
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking soda, and salt.
- Add shredded coconut and crushed pineapple. Stir to combine.
- In another bowl, whisk together oil, eggs, and vanilla extract.
- Combine wet and dry ingredients until just mixed.
- Pour the batter into a greased loaf pan.
- Bake for 50 minutes or until a toothpick comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack.
