Ingredients

  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • 2 pie crusts

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat. Add onions and cook until soft.
  3. Stir in flour, salt, pepper, garlic powder, and thyme. Cook for 1 minute.
  4. Gradually whisk in chicken broth and milk. Cook until thickened.
  5. Add chicken, carrots, peas, and potatoes. Mix well.
  6. Pour the mixture into a pie crust in a pie dish.
  7. Cover with the second pie crust and seal the edges. Cut slits in the top crust.
  8. Bake for 30-35 minutes or until golden brown.
  9. Let it cool for 10 minutes before serving.
