Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion and garlic to the pot, sauté until fragrant.
  5. Stir in tomato paste, thyme, salt, and pepper.
  6. Add beef back to pot along with broth, carrots, potatoes, and bay leaf.
  7. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  8. Remove bay leaf and serve hot.
