Ingredients

- 2 cups of butternut squash, cubed
- 1 cup of green beans, trimmed
- 1 cup of quinoa, rinsed
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the butternut squash with olive oil, garlic powder, onion powder, salt, and pepper.
- Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
- Meanwhile, cook the quinoa according to package instructions.
- Blanch the green beans in boiling water for 3-4 minutes, then drain.
- Combine the cooked quinoa, roasted squash, and green beans in a serving dish.
- Toss gently and garnish with fresh herbs.
