Instructions

  1. Rinse quinoa under cold water.

  3. Reduce heat and cover, simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add chopped vegetables and sauté for 5 minutes.
  6. Stir in chickpeas, garlic powder, onion powder, salt, and pepper.
  7. Add cooked quinoa to the skillet and mix well.
  8. Serve warm.
