- 1 cup almond milk
- 2 cups pumpkin puree
- 1 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/4 teaspoon salt
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 1 pre-made dairy-free pie crust
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix almond milk, pumpkin puree, brown sugar, spices, and salt.
- Add cornstarch and vanilla extract, and mix until smooth.
- Pour the mixture into the pie crust.
- Bake for 50-60 minutes until the filling is set.
- Let cool before serving.
Notes
- Use freshly made pumpkin puree for better flavor.
- Serve with dairy-free whipped cream if desired.
