Ingredients

- 4 cups of diced potatoes
- 2 cups of green beans, trimmed
- 1 cup of corn kernels
- 1 cup of diced onions
- 1 cup of vegetable broth
- 1 teaspoon of garlic powder
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 tablespoon of olive oil
Instructions
- Prepare all vegetables by washing and dicing them.
- Place diced potatoes in the crockpot.
- Add green beans, corn, and onions on top of the potatoes.
- In a bowl, mix vegetable broth, garlic powder, salt, and pepper.
- Pour the broth mixture over the vegetables.
- Drizzle olive oil on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir before serving and adjust seasoning if necessary.
