Ingredients

- 3–4 pounds beef roast
- 1 cup beef broth
- 2 cups carrots, chopped
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Brown the beef roast on all sides.
- Place the roast in the crockpot.
- Add beef broth, carrots, onion, garlic, salt, pepper, thyme, and rosemary.
- Cover and cook on low for 8 hours or high for 4 hours.
- Remove the roast and let it rest for 10 minutes before slicing.

- This roast pairs well with mashed potatoes.
- You can add potatoes for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
