Ingredients

- 4 cups broccoli florets
- 1 cup diced carrots
- 1 cup diced onion
- 4 cups vegetable broth
- 2 cups shredded sharp cheddar cheese
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place broccoli, carrots, onion, and vegetable broth in the crockpot.
- Cook on low for 6 hours or on high for 3 hours.
- Add butter, garlic powder, salt, and pepper.
- Blend the soup with an immersion blender until smooth.
- Stir in heavy cream and cheddar cheese until melted.
- Serve hot and enjoy.

- Use fresh broccoli for best flavor.
- You can use gluten-free broth if needed.
- Add more cheese for a richer flavor.
