Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a pan.
  2. Brown the beef on all sides.
  3. Transfer beef to the crockpot.
  4. Add carrots, potatoes, onion, and garlic to the crockpot.
  5. Mix in beef broth, tomato paste, thyme, salt, pepper, and Worcestershire sauce.
  6. Stir well to combine.
  7. Cover and cook on low for 8 hours or high for 4 hours.
  8. Serve hot.

Notes

  • Adjust seasoning to taste.
  • Can add peas for extra color and flavor.
