A hearty and comforting crockpot beef stew.
Ingredients

- 2 lbs beef chuck, cut into 1-inch pieces
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pan.
- Brown the beef on all sides.
- Transfer beef to the crockpot.
- Add carrots, potatoes, onion, and garlic to the crockpot.
- Mix in beef broth, tomato paste, thyme, salt, pepper, and Worcestershire sauce.
- Stir well to combine.
- Cover and cook on low for 8 hours or high for 4 hours.
- Serve hot.
Notes
- Adjust seasoning to taste.
- Can add peas for extra color and flavor.
- Leftovers can be refrigerated for up to 3 days.
