- 8 ounces pasta
- 2 red bell peppers
- 1 cup heavy cream
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes
- 1 cup burrata cheese
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Roast the red bell peppers for 25 minutes until charred.
- Remove the skin and seeds from the peppers and blend until smooth.
- In a pan, heat olive oil and sauté garlic until golden.
- Add the blended peppers, cream, salt, pepper, and red pepper flakes to the pan.
- Cook on low for 5 minutes, stirring occasionally.
- Cook pasta according to package instructions; drain.
- Toss the pasta with the sauce.
- Serve topped with burrata and fresh herbs.
