Ingredients

- 2 lbs boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (14 oz) diced green chilies
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Place chicken, beans, green chilies, onion, garlic, broth, cumin, chili powder, salt, and pepper in a crockpot.
- Cook on low for 6-8 hours or high for 4 hours.
- Shred the chicken and return it to the pot.
- Stir in heavy cream and heat for an additional 30 minutes.
- Serve hot, garnished with fresh cilantro.
Notes
- For a thicker chili, mash some of the beans.
- You can substitute chicken with turkey or tofu for a different protein.
- Adjust seasoning according to your taste.
