Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14 oz) diced green chilies
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Place chicken, beans, green chilies, onion, garlic, broth, cumin, chili powder, salt, and pepper in a crockpot.
  2. Cook on low for 6-8 hours or high for 4 hours.
  3. Shred the chicken and return it to the pot.
  4. Stir in heavy cream and heat for an additional 30 minutes.
  5. Serve hot, garnished with fresh cilantro.
