- 2 cups cooked shredded chicken
- 8 oz cream cheese, softened
- 1 cup shredded cheese
- 1 cup enchilada sauce
- 8 flour tortillas
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the shredded chicken, cream cheese, half of the shredded cheese, onion, bell pepper, garlic powder, cumin, salt, and pepper.
- Spoon the chicken mixture onto each tortilla and roll them up.
- Place the rolled tortillas in a greased baking dish.
- Pour the enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake for 25-30 minutes or until the cheese is bubbly.
- Serve hot and enjoy.
