Cranberry Apple Quinoa Salad: 7 Reasons to Love It

Description

A refreshing salad with cranberries, apples, and quinoa.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cranberries
  • 1 apple, diced
  • 1/4 cup red onion, chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a large bowl, combine quinoa, cranberries, apple, red onion, and parsley.
  7. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  8. Pour dressing over the salad and toss to combine.
  9. Top with feta cheese before serving.

Notes

  • Serve chilled or at room temperature.
  • Can be made a day in advance.
  • Substitute feta with avocado for a vegan option.
