- 1 pound ground beef
- 1 cup breadcrumbs
- 1/2 cup onion, chopped
- 1/2 cup bell pepper, chopped
- 1 egg
- 1/4 cup ketchup
- 1 teaspoon garlic powder
- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix ground beef, breadcrumbs, onion, bell pepper, egg, ketchup, garlic powder, salt, and pepper.
- Shape the mixture into a loaf and place in a baking dish.
- Spread the mashed potatoes over the meatloaf.
- Top with shredded cheddar cheese.
- Bake for 1 hour or until the meatloaf is cooked through.
- Let it cool for a few minutes before slicing and serving.
