- 1 cup cooked chicken, shredded
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn, canned or frozen
- 1/2 cup red bell pepper, diced

- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 8 egg roll wrappers
- Oil for frying
Instructions
- In a large bowl, combine chicken, black beans, corn, red bell pepper, green onions, spices, and cheese.
- Place about 2 tablespoons of the filling in the center of each egg roll wrapper.
- Fold the sides over the filling and roll tightly to seal.
- Heat oil in a deep pan over medium heat.
- Fry the egg rolls until golden brown, about 3-4 minutes on each side.
- Remove and drain on paper towels.
- Serve with your favorite dipping sauce.
