A collection of refreshing cold sides perfect for Thanksgiving.
Ingredients
Scale
- 2 cups of diced cucumber
- 1 cup of cherry tomatoes, halved
- 1 cup of corn, drained
- 1 cup of diced bell pepper
- 1/2 cup of red onion, finely chopped
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of olive oil
- 2 tablespoons of red wine vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine cucumber, cherry tomatoes, corn, bell pepper, red onion, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad mixture and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.

- Feel free to add other vegetables.
