Ingredients

  • 2 tablespoons of red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cucumber, cherry tomatoes, corn, bell pepper, red onion, and parsley.
  2. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  3. Pour the dressing over the salad mixture and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
