Ingredients

- 2 cups cooked and chilled quinoa
- 1 cup diced cucumber
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the quinoa, cucumber, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve cold and enjoy your Thanksgiving meal.
