Delicious banana bread muffins with a coffee cake twist.
Ingredients

- 3 ripe bananas, mashed
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/3 cup melted butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1/2 cup chopped walnuts
- 1/2 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix mashed bananas with sugar and brown sugar.
- Add melted butter and mix well.
- Stir in the egg and vanilla extract.
- Combine baking soda, salt, flour, and cinnamon in another bowl.
- Add dry ingredients to the banana mixture and mix until just combined.
- Fold in chopped walnuts.
- Pour the batter into a greased muffin tin.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Use overripe bananas for better flavor.
- You can add chocolate chips for extra sweetness.
- Store in an airtight container for up to three days.
