A classic creamy rice pudding that is rich and comforting.
Ingredients

- 1 cup Arborio rice
- 4 cups whole milk
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 large eggs
Instructions
- In a medium pot, combine rice, milk, sugar, and salt.
- Bring to a simmer over medium heat, stirring occasionally.
- Reduce heat and cook for 20 minutes until rice is tender.
- In a bowl, whisk together eggs and vanilla extract.
- Slowly add a cup of the hot rice mixture to the egg mixture, whisking constantly.
- Stir the egg mixture back into the pot.
- Cook for an additional 5 minutes, stirring until thickened.
- Remove from heat and stir in cinnamon.
- Let cool before serving.
Notes
- Can be served warm or chilled.
- Top with additional cinnamon or fresh fruit if desired.
- Store leftovers in the refrigerator.
