Ingredients

Instructions

  1. In a medium pot, combine rice, milk, sugar, and salt.
  2. Bring to a simmer over medium heat, stirring occasionally.
  3. Reduce heat and cook for 20 minutes until rice is tender.
  4. In a bowl, whisk together eggs and vanilla extract.
  5. Slowly add a cup of the hot rice mixture to the egg mixture, whisking constantly.
  6. Stir the egg mixture back into the pot.
  7. Cook for an additional 5 minutes, stirring until thickened.
  8. Remove from heat and stir in cinnamon.
  9. Let cool before serving.
