Description

Delicious cinnamon roll muffins with a soft texture and sweet cinnamon flavor.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine melted butter, buttermilk, eggs, and vanilla.
  4. Pour wet ingredients into dry ingredients. Mix until just combined.
  5. In a small bowl, mix brown sugar and cinnamon.
  6. Fill muffin tins halfway with batter. Sprinkle cinnamon sugar mixture on top.
  7. Top with remaining batter and sprinkle more cinnamon sugar on top.
  8. Bake for 15-20 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
