Ingredients

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream together the butter, brown sugar, and granulated sugar.
  3. Add the egg and vanilla extract, and mix well.
  4. In another bowl, combine oats, flour, cinnamon, baking soda, and salt.
  5. Gradually blend the dry ingredients into the wet mixture.
  6. If desired, fold in chopped nuts.
  7. Drop spoonfuls of dough onto a baking sheet.
  8. Sprinkle streusel topping over each cookie.
  9. Bake for 10-12 minutes or until golden brown.
  10. Let cool before serving.
