Delicious cinnamon crumble banana bread with a crunchy topping.
Ingredients

- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup rolled oats
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, mash the bananas with a fork.
- Mix in the melted butter.
- Add baking soda and salt, then stir.
- Mix in sugar, egg, and vanilla extract.
- Stir in flour until just incorporated.
- In another bowl, combine brown sugar, oats, and cinnamon for the crumble.
- Pour the banana mixture into a greased loaf pan.
- Sprinkle the crumble mixture on top.
- Bake for 60 minutes or until a toothpick comes out clean.
Notes
- Store in an airtight container.
- Can be frozen for later use.
- Add nuts for extra crunch if desired.
