Ingredients

- 1 block firm tofu (14 oz)
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 chipotle peppers in adobo sauce, chopped
- 1 tablespoon adobo sauce
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Press the tofu to remove excess moisture.
- Crumble the tofu into small pieces.
- Heat vegetable oil in a skillet over medium heat.
- Add chopped onion and cook until translucent.
- Add minced garlic and cook for 1 minute.
- Add crumbled tofu to the skillet.
- Stir in chipotle peppers, adobo sauce, cumin, smoked paprika, salt, and pepper.
- Cook for 8-10 minutes, stirring occasionally.
- Garnish with fresh cilantro before serving.
Notes
- Serve in tacos, burritos, or bowls.
- Can be stored in the refrigerator for up to 3 days.
- Adjust spice level by adding more or fewer chipotle peppers.
