A classic Cajun chicken etouffee dish that is rich and flavorful.
Ingredients

- 1 pound chicken, diced
- 1/4 cup vegetable oil
- 1/4 cup flour
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cooked rice
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat oil in a large pot over medium heat.
- Add flour and stir to make a roux, cooking until golden brown.
- Add onion, bell pepper, celery, and garlic. Cook until softened.
- Add diced chicken and cook until no longer pink.
- Pour in chicken broth and add Cajun seasoning. Stir well.
- Simmer for 30 minutes, stirring occasionally.
- Serve over cooked rice and garnish with green onions.
Notes
- Adjust the seasoning to your taste.
- For spicier etouffee, add more Cajun seasoning.
- This dish can be made ahead and reheated.
