- 2 lbs chicken breast
- 1 cup low-sodium chicken broth
- 1 cup diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Place the chicken breast in the crockpot.
- Add the chicken broth and diced tomatoes.
- Layer in the chopped carrots, celery, onion, and garlic.
- Sprinkle thyme, basil, salt, and pepper over the top.
- Cover and cook on low for 6-8 hours or until chicken is cooked through.
- Shred the chicken with two forks before serving.
