A comforting dish of chicken and dumplings made easily in a crockpot.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup frozen peas
  • 1 package (8 oz) refrigerated biscuit dough

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add chicken broth, carrots, celery, onion, salt, pepper, thyme, and cream of chicken soup.
  3. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  4. Shred the chicken before adding frozen peas.
  5. Cut biscuit dough into quarters and drop into the crockpot.
  6. Cover and cook for an additional 30-40 minutes until dumplings are cooked through.

Notes

  • Adjust seasoning to taste.
  • For a thicker consistency, use less broth.
  • This dish can be frozen for later use.
