Description
Cherry Bakewell tartlets are small pastries filled with almond frangipane and topped with cherry jam and icing.
Ingredients

- 200g shortcrust pastry
- 100g unsalted butter
- 100g caster sugar
- 2 large eggs
- 100g ground almonds
- 1 tsp almond extract
- 100g cherry jam
- 50g icing sugar
- 1–2 tbsp water
- Cherries for decoration
Instructions
- Preheat your oven to 180°C (350°F).
- Roll out the shortcrust pastry and line tartlet tins.
- In a bowl, cream together the butter and sugar.
- Add the eggs, ground almonds, and almond extract. Mix well.
- Spoon the frangipane mixture into the pastry cases.
- Top each tartlet with a spoonful of cherry jam.
- Bake for 20-25 minutes until golden.
- Let them cool, then mix icing sugar with water and drizzle over tartlets.
- Garnish with cherries.
Notes
- Use store-bought pastry for convenience.
- Adjust the amount of jam based on your preference.
- Store in an airtight container.
