Description

Cherry Bakewell tartlets are small pastries filled with almond frangipane and topped with cherry jam and icing.


Ingredients

  • 200g shortcrust pastry
  • 100g unsalted butter
  • 100g caster sugar
  • 2 large eggs
  • 100g ground almonds
  • 1 tsp almond extract
  • 100g cherry jam
  • 50g icing sugar
  • 12 tbsp water
  • Cherries for decoration

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Roll out the shortcrust pastry and line tartlet tins.
  3. In a bowl, cream together the butter and sugar.
  4. Add the eggs, ground almonds, and almond extract. Mix well.
  5. Spoon the frangipane mixture into the pastry cases.
  6. Top each tartlet with a spoonful of cherry jam.
  7. Bake for 20-25 minutes until golden.
  8. Let them cool, then mix icing sugar with water and drizzle over tartlets.
  9. Garnish with cherries.
