- 1 pound ground beef
- 1 cup spinach, chopped
- 1 cup breadcrumbs
- 1 cup shredded cheese
- 2 cups potatoes, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- In a bowl, mix ground beef, spinach, breadcrumbs, cheese, onion, garlic, Italian seasoning, salt, and pepper.
- Shape the mixture into meatballs.
- Layer sliced potatoes at the bottom of a baking dish.
- Place meatballs on top of potatoes.
- Cover with remaining cheese.
- Bake for 30-35 minutes until meatballs are cooked and potatoes are tender.
Notes
- Use fresh spinach for better flavor.
- You can substitute ground turkey for a leaner option.
- Add more cheese for a cheesier dish.
