Ingredients

  • 1 cup spinach, chopped
  • 1 cup breadcrumbs
  • 1 cup shredded cheese
  • 2 cups potatoes, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. In a bowl, mix ground beef, spinach, breadcrumbs, cheese, onion, garlic, Italian seasoning, salt, and pepper.
  3. Shape the mixture into meatballs.
  4. Layer sliced potatoes at the bottom of a baking dish.
  5. Place meatballs on top of potatoes.
  6. Cover with remaining cheese.
  7. Bake for 30-35 minutes until meatballs are cooked and potatoes are tender.
